Which one you sell really depends on your shooting preferences. If it were my decision, I would sell the X-T20.
Of the three bodies you have, the X-T20 would be the least useful to me. A gripped X-T1 is my workhorse camera. And the X-Pro1, well is the X-Pro1.
For me, it's a matter of ergonomics versus incremental improvements, esp. in the imaging sensor. I'm not sure that trading off a 24MP and big AF improvements is worth it to keep an older camera. Which is why in my fading days with Nikon, one of my go-to bodies was a D5200, and not an older D300.
Do you need the faster AF/tracking for what you shoot? Or is it just a feature? The new sensor is awesome. But that doesn't mean the 16mp sensor is not also great. If it helps, I had the X-Pro2. Sold it to go back to the X-T1 because the T1 with grip is the better camera for me, for how I shoot. Comparing the X-T1 and X-T20, the ergonomics, controls, and much better build with weather sealing are far more important to me than the newer sensor and AF of the X-T20.But with the XT-20 I would have the new sensor and faster AF for tracking, if I'm not wrong about AF. Decisions. decisions...I think I'll end up keeping all of them.

I'd sell the XT1. The X-T20 is a better compliment to the larger size and slower AF of the XP1. The X-T20 and he XP1 together give you a wider range of capabilities. Of course, I probably feel that way because that's what I have.
Weather sealing is not important for me. But I like the xt1 even if I don't mind shooting with the XT20 so it's a draw. Maybe I'll wait for definite decision.
Weather sealing is just one part. Ergonomics and controls are a major factor.
That's exactly it. Preferred ergonomics is personal to the individual.Yes, ergonomics is important. I find the XP1 suits me well, maybe more then xt1 but I suppose it's subjective.
sell 'em all and buy an X-T2 or X-Pro2...whichever style you prefer. If you're not a professional....you only need one body (said the guy that never takes photos that has 2 bodies and another camera)
