Gosh, it's been a while since I posted in this thread
I tend to adjust based on type of travel, too.
Minimalist and city: Fujifilm X100V. A marvel.
Minimalist for hiking and cycling: Nikon Z 50 with Z 18-140mm f/3.5-6.3 DX. Frugal goodness.
Light travel, general: Nikon Z 6 with Z 24-200mm f/4-6.3 and Nikon Z 26mm f/2.8 (or, if more indoor shots are expected, Nikon Z 35mm f/1.8 S). Does it all.
That said, the Olympus OM-D E-M5 III with the 12-45mm f/4 PRO also gives me a fantastic small combo - just without the reach, but smaller than even the minimalist hiking kit, sturdier and way better weather sealed, so when I'm in doubt about weather conditions, it quite often makes its way into my bag. In fact, I'm contemplating using it on my upcoming city trip (back to Berlin once more).
I also have enjoyed travelling with prime kits, based around either the Nikon Z fc or a Leica M body (usually the M 262). But while they're still pretty lightweight, this also means it's going to be photo-centric affair to a degree that necessitates enough opportunities to use what I carry, so, it's commonly not a case of "travelling light" ...
