I see clouds everyday that I fly, but here we have something that I don't remember seeing before.

I'm not entirely sure what kind of clouds are these, but there is an obvious cyclonic pattern that is associated with low pressure systems in our planet. Due to the Coriolis force, these systems rotate in an anticlockwise direction in the northern hemisphere and in a clockwise direction in the southern hemisphere.

Both look superb to me, Yaniv, but I think that I prefer the colour version.

B&W for me.
because the canyon wall looks somewhat less hazy in the b&w version.
That and a general preference for b&w

That’s my preference as well, and for the same reasons. I may actually go back and reprocess the color version.
