No fried egg on there, though 😃 I think I know what you're seeing, though - it was hummus with a little bit of spicy oil on top.

Sorry for my oversight, I left the aperture wide open ... I wasn't in the mood to look at this (or shoot it) while I could eat it 😛

Dark chocolate, over 70% coca being melted in a ban marie. This is going into a beef stew where the caramelized shin beef has been braised with the mirepoix, red wine garlic and orange peel and bouquet garni for about 3 hours with the resulting sauce strained into a liquid and reduced with more wine. It works!

Continuing the chocolate theme, this is me carrying out a request to put that, fresh chillies and corriander into the chilli at the end. And it works. I never (like most people?) put cheese on a dish like this, has to be sour cream.
