Just had some absolutely amazing salmon at a coworker's house party over the weekend. He has a Pit Boss pellet smoker and it did a really good job on some very fresh Alaskan salmon.
I haven't personally used a smoker (growing up, a smoker was the tool used by my dad to calm down the honeybees - filled with sticks, twigs and newspaper). But I do love cooking a pork butt, usually low and slow in the oven with a spice rub, or in a crockpot with a carnitas mix of spices, orange juice, onions and jalapeno.
